摘 要:为了挖掘不同类型烤房的优势,并为密集烤房和配套烘烤工艺的发展和优化提供依据,对比分析了三层密集烤房(T1)、四层密集烤房(T2)和普通烤房(T3)对烤后烟叶多酚、常规化学成分、有机酸质量分数和感官评吸质量得分的影响。结果表明,普通烤房的"后熟"效应使得烤后烟叶的多酚类物质质量分数较T1和T2分别显著提高了13.62%,14.53%(中部烟叶)和27.73%,22.07%(上部烟叶),并且在加速淀粉、蛋白质降解的同时,提高了烟叶的总糖和还原糖质量分数;有机酸总量在中部烟叶中表现为T3(206.91 mg/g)>T1(169.76 mg/g)>T2(161.51 mg/g),在上部烟叶中表现为T2(161.30 mg/g)>T1(155.82 mg/g)>T3(152.37 mg/g)。可见,普通烤房烤后中部烟叶、四层密集烤房烤后上部烟叶的各种化学物质质量分数及其比例较为协调,烤后烟叶的香气质量也表现较好,通过深入研究不同类型烤房的烘烤机理来指导密集烤房设备的研发和烘烤工艺的优化有着重大的意义。The advantages of different barns were studied to offer basis for optimizing flue-curing and its matching curing technology. The effects of three kinds of barns (T1-three-shelf bulk curing barn, T2-four-shelf bulk curing barn, T3-traditional flue-curing barn) on polyphenol, routine chemical components, organic acid and score of sensory evaluation of cured tobacco were analyzed. The results showed that the afterripening effect of traditional flue-curing barn on the flue-cured tobacco made its the polyphenol content much higher and were increased by 13.62%, 14.53% of middle leaves and 27.73% , 22. 07% of upper leaves compared with T1 and T2. Besides, the afterripening effect could not only speed up the degradation of chemical components and protein, but also improve the content of total sugar and reducing sugar. The total acid manifested as 33 (206. 91 mg/g) 〉T1 (169.76 mg/ g) 〉T2 (161.51 mg/g) of middle leaves and T2 (161.30 mg/g) 〉T1 (155.82 mg/g) 〉T3 ( 152.37 mg/g) of upper leaves. In conclusion, the chemical components content and its ratio of fluecured middle tobacco leaves in traditional flue-curing barn and upper leaves in four-shelf bulk curing barn were more harmony with much better aroma quality. It was great importance to develop equipments of bulk-curing barn and optimize the curing technology by studying different types barns further.
