摘 要:选用含量40%的大豆异黄酮(结合型占86.33%)和黑曲霉产β-葡萄糖苷酶为研究对象,以水解时间和水解温度为试验因素,以酶解产物游离型苷元含量为判断标准,采用双因素重复试验进行研究。结果表明:不同的水解时间对游离型苷元含量的影响不显著,而水解温度以及水解温度与水解时间的交互作用对游离型苷元含量的影响极其显著;进一步分析比较各处理平均数间的差异显著性,选出了水解时间和水解温度对游离型苷元含量影响的最优处理。The paper conducted the study on 40% soy isoflavones (with 86.33% combined type) and β- glucosidase from Aspergillus niger, with Hydrolysis time and Hydrolysis temperature as the experimental fac- t ors, the content of free daidzein from enzymic hydrolysates as the measuring standard and double-factor re- peated test as the methodology. The study shows: different hydrolysis time has no significant effect on the con- tent of free daidzein; the hydrolysis time and the interaction between hydrolysis time and hydrolysis tempera- ture have a significant effect on the content of free daidzein. Through further analysis and comparison of the significant differences between the averages, the study selected the optimal approach to the effect of hydrolysis time and Hydrolysis temoerature on the content of free daidzein.
