摘 要:为阐明牦牛(Bos grunniens)乳的脂肪酸组成特性,采用气相色谱-质谱方法分析了牦牛乳中脂肪酸的组成及共轭亚油酸(CLA)、亚油酸(LA)的含量,并与普通牛乳、水牛乳进行了比较.结果显示,试验乳样中均可检测出10多种主要的脂肪酸组分,比例最高的为棕榈酸、油酸、硬脂酸和肉豆蔻酸,其比例在牦牛、水牛和奶牛之间存在差异;牦牛乳中总不饱和脂肪酸比例显著高于水牛乳和普通牛乳(P<0.05);牦牛乳中CLA含量显著高于水牛乳和普通牛乳(P<0.01),但普通牛乳中LA含量显著高于牦牛和水牛乳(P<0.01).结果提示,与普通牛乳相比,牦牛乳中高比例的不饱和脂肪酸以及高含量的CLA,赋予其更有益于人体健康的优良特性.To elucidate the characteristics of milk fatty acid profiles of yak(Bos grunniens), gas chromatography-mass spectrometry was employed to compare fatty acid compositions and conjugated linoleic acid(CLA) and linoleic acid contents in the milks of yak, buffalo and cow. More than ten major fatty acids were detected in the milk samples assayed, with the high proportion fatty acids including palmic acid, oleic acid, stearic acid and myristic acid. The proportions of these fatty acids varied among yak, buffalo and cow; Yak milk contained higher proportion of total unsaturated fatty acids than buffalo and cow milks(P〈0.05), and also higher CLA content than buffalo and cow milks(P〈0.01), while bovine milk contained higher concentration of linoleic acid than yak and buffalo milks(P〈0.01). These results suggest that yak milk seems to be more beneficial for human health due to its high percentage of unsaturated fatty acids and increased CLA content when compared with bovine milk.
