芦根大青叶保健饮料的研制

摘  要:芦根和大青叶应用于饮料中,添加量的多少直接影响饮料的感官,从结构上分析看,芦根大青叶的主要成分对色泽、香气、口感和组织形态有重要影响。芦根大青叶在最佳提取条件下获得的有效成分的量最多。当芦根大青叶提取液液添加30mL时,感官评价最佳。芦根大青叶保健饮料为橙黄色澄清液体,具有芦根大青叶保健饮料特殊混合香味及蜂蜜和柠檬酸的味道,酸甜适口,具有清热解毒、明目等功效,是理想的保健饮品。芦根的有效成分主要是天门冬酰胺、薏苡素和多糖,前两者具有显著的止咳平喘的作用。大青叶总糖、谷氨酸、VB2和K含量较高。实验中以白砂糖作甜味剂,柠檬酸作酸味剂,不加色素、香精。The addition amounts of reed rhizomeand Folium isatidis used in beverages have a direct impact on the beverage senses. According to the structural analysis, the main component of reed rhizome Folium isatidis has a significant impact on the beverage colour, aroma, texture and morphology. Maximum amount of the active ingredient of reed rhizome Folium isatidis is obtained under optimum conditions. When reed rhizome Folium isatidis extract is added 30ml, sensory evaluation is of the best. reed rhizome Folium isatidis health drink is orangeyellow clear liquid with special aroma of reed rhizome Folium isatidis health drink and taste of honey and citric acid. It tastes sweet and sour and has health function It is an ideal health drink. The main active ingredients of reed rhizome are asparagine, coixol, and polysaccharides; the first two have a significant role in curing cough and asthma. Amounts of folium isatidis total sugar, high glutamate, VB2 and K content are relatively high. Experiments were conductedwith white sugar as a sweetener, citric acid as sour agent, without pigments and essences.
