摘  要:以壶瓶枣(Ziziphus jujuba Mill.cv.Huping)为试材,跟踪枣果实发育进程,测定果皮中MDA、脯氨酸含量及抗氧化酶活性。结果表明,随着果实发育,果皮中SOD,POD及CAT活性处于下降趋势,而MDA、脯氨酸含量则呈增加趋势。数据分析显示,各生理指标在半红期与白熟期差异均达到显著水平;而半红期与全红期,除脯氨酸外,其他指标之间差异均未达到显著水平,这与枣果实在半红期开始发生凋亡、死亡及裂果相吻合。表明抗氧化酶类活性的变化与枣果皮的衰老、凋亡及死亡有着密切的关系。The Huping jujube was used as the materials to study the changes of the activity of SOD,POD,CAT and the content of MDA and proline in the pericarp during the fruit development.The results showed that with the development of the fruit,the activity of SOD,POD and CAT decreased,while the content of MDA and proline increased.By comparing these physiological index at different developmental stages,the results showed that the part-red stage was the critical period,which consistent with the apoptosis,death of the fruit peel and the date of fruit cracking.All of these suggests indicated that the closely relationships between the activity of antioxidant enzymes and the senescent,apoptosis,death of pericarp.
