摘 要:目的初探不同温度热炮制对珍珠中寡肽类化学成分的影响。方法运用高效液相色谱法对珍珠及其不同温度热炮制品的寡肽类化学成分进行对比分析。结果初步分析了珍珠及其150,600,900℃的热炮制品的高效液相色谱图,随热炮制温度的升高四种样品中共有的峰4和峰8的峰面积依次下降,其中600℃烘烤品的色谱峰数最多。结论热炮制法能够在150~600℃的范围内增加珍珠中寡肽类化学成分的数量,但当温度达到900℃,很多寡肽成分被破坏。Objective To have a preliminary study on the chemical compositions of Pearl Oligopeptides by processing under different temperatures. Methods HPLC was used to have a comparative analysis on pearl and its different high temperature processed products. Results HPLC chromatogram of pearl and its different high temperature processed products under 150,600 and 900 ℃ was analyzed. The peak areas of Peak 4 and 8 were going down following the increase of temperature. And there were most peak numbers in the chromatogram of sample under 600 ℃ among all the samples. Conclusion In the range of the temperature from 150 to 600 ℃,the number of oligopeptide in pearl was increased. But when the temperature reached 900 ℃,a lot of oligopeptide components were broken.
