摘　　要：目的掌握福州市食品污染状况和污染趋势,为食品安全风险评估、标准制(修)订提供监测数据,同时也可以提示食品安全隐患,为食品安全监管提供参考。方法根据《2013年福建省卫生系统食品化学污染物及食源性致病菌监测方案》和《2013年福建省餐饮服务食品安全监督抽检方案》提供的方法进行采样检测。结果 2013年该市食品安全风险监测方案的任务,共有13类常规监测和8类专项监测食品,共775份样本,其中婴幼儿食品合格率为100%,水产品中重金属合格率为95.0%,乳及乳制合格率为100%;餐饮服务食品安全监督抽检和临时性监督任务,共有14类食品,383份样本,其监测结果大部分合格率均为100%。结论该市食品安全形势总体向好,但也发现了一些问题。根据我市的监测数据分析污染物的来源,提出需要加强监督的食品种类以及应采取的控制措施。[Objective]To know the status and trend of food pollution in Fuzhou City,provide the monitoring data for food safety risk assessment and standard establishment（ amendment）,indicate the food safety hidden trouble,and provide the reference for food safety supervision. [Methods]Sampling and detection were carried out according to the methods from the Monitoring program of food chemical pollutants and foodborne pathogenic bacteria for health institution in Fujian Province in 2013,and the Food safety supervision and inspection scheme for food service industry in Fujian Province in 2013. [Results]Based on the food safety risk monitoring plan in Fuzhou City in 2013,there were 13 types of food for routine monitoring and 8 types of food for special monitoring,including 775 samples. The qualified rate of infant food was 100%,the qualified rate of heavy metals in aquatic products was95. 0%,and the qualified rate of milk and dairy products was 100%. In the food safety supervision and temporary inspection,383 samples of 14 types of food were detected,and qualified rates were mainly 100%. [Conclusion]The situation of food safety is basically good in Fuzhou City,but some problems have been found. The article analyzes the sources of pollutants according to the monitoring data,and put forward the food types that the supervision should focus on and the effective control measures.
