摘 要:目的为了解新疆昌吉市建筑工地食堂及居住环境的卫生状况,减少建筑工地食源性疾患和食物中毒事件的发生,为今后建筑工地食堂的食品卫生安全监督管理和制定相应的管理对策提供指导依据,为建筑工人营造安全、卫生的就餐环境。方法按照《中华人民共和国食品安全法》、《餐饮服务食品安全监督管理办法》、《餐饮服务许可管理办法》和《餐饮服务许可审查规范》的要求,对工地食堂的餐饮服务许可证、从业人员健康证明及个人卫生、加工场所卫生条件和采购索证索票等情况,统一制订建筑工地食堂调查表格,采用现场查看、询问和填写调查表的方法进行调查,并进行分类资料分析,结论昌吉市建筑工地食堂卫生状况较差,存在严重的食品安全隐患。OBJECTIVE To understand the Changji construction site canteens and sanitary condition of the living environment, reduce the occurrence of foodborne illness and food poisoning incidents on construction sites for future building site canteen food safety supervision and management and to develop appropriate management strategies provides guidance, creating safe and hygienic dining environment for construction workers. METHOD According to People's Republic of China food security method, and catering service food security supervision management approach, and catering service license management approach and catering service license review specification of requirements, on site canteen of catering service license, and practitioners health proved and the personal health, and process places health conditions, and procurement cable card cable votes, situation, unified developed construction site canteen survey form, used site view, and asked and fill in survey table of method for survey, and for classification information analysis, CONCLUSIONS Changji city Builder's poor sanitary condition of dining, there were serious food safety problems.
