摘  要:采用ICP-AES法分别对超市及菜场的9种标注"无铅工艺"皮蛋和8种未标注"无铅工艺"皮蛋的蛋白与蛋黄进行7种重金属元素铅、铜、铬、汞、铝、镉、砷的检测,其检出限为0.90-37.20ng/mL,回收率为91.9%-110.1%.研究表明:皮蛋中普遍都含有以上7种重金属元素,"无铅"皮蛋中的铜、铝质量分数及"有铅"皮蛋中的铅、砷质量分数明显较高,且均超过成人每日最高耐受量,可能分别是两类皮蛋中潜在的最大风险.故建议成人每次摄入皮蛋的量尽可能少,且每次间隔相对较长的时间再食用.对于儿童和老年人而言,由于皮蛋中均含有铅,故建议尽量避免食用皮蛋.Using ICP-AES method to detect nine kinds of preserved eggs with the label of"produced in a lead-free process"and eight kinds of preserved eggs without that kind of label sold in supermarket.Seven kinds of heavy metal elements such as lead,copper,chromium,mercury,aluminum,cadmium and arsenic are detected for both the egg white and the egg yolk.The detection limit is 0.90-37.20ng/mL,and the recovery rate is between 91.9% -110.1%.According to the research,most of the preserved eggs are contaminated with those seven heavy toxic metal elements.The mass fraction of copper and aluminum in the"lead-free"eggs and the content of lead and arsenic in the "lead"preserved eggs are found significantly high,and all of them exceed the recommended maximum daily tolerance for an adult,which could be the biggest risk for those who eat the eggs.Thus,it is suggested that adults should eat the preserved eggs as less as possible,and the time interval to eat another one should be relatively long,while children and the elderly should not eat the preserved eggs because of the toxic content of lead.
