摘 要:借助扫描电镜观察了食品塑料包装中纳米碳酸钙颗粒的分布及其形态,发现由于纳米颗粒的表面效应,碳酸钙纳米颗粒极易发生团聚,分布不均匀;通过4种食品模拟迁移试验,考察了纳米碳酸钙迁移规律,发现迁移量随着温度升高、时间延长而增大,在酸性环境下迁移量最大。分析了模拟物对迁移量的影响关系。Distribution and morphology of nano-meter CaCO_3 in food plastic package were studied by means of SEM. It was found that nanometer CaCO_3 reunited easily and dispersed unevenly because of surface effects of nanoparticles, by simulate testing in four food simulants, the migration character of Nano-meter CaCO_3 was investigated, the results showed migration increased with increase of soaking temperature and soaking time and migration in 4 acetic acid was largest, and some influencing factors for migration were analysed.
