摘　　要：通过阐述近期国内外果蔬切削理论以及国内外果蔬切丁装备研制情况,介绍了果蔬切丁这一课题在国内外的发展现状,分析了近年来我国的果蔬切削理论研究以及切丁机研制取得的显著进展,但我国切丁机发展水平与欧美国家相比仍有差距,表现为欧美发达国家的果蔬切丁装备在切丁机结构、丁断面形状等方面相比国内切丁机具有较大优势。According to the elaboration of the recent dicing theories and dicers of fruits and vegetables at home and abroad, the article will introduce the development of the subject on fruits and vegetables dicing. The fruits and vegetables dicing theories and dicers have developed rapidly in our country, with the developed countries, domestic dicers demands an improvement in the structure of shape of the section,etc. compared dicer, theshape of the section,etc.
