摘 要:为了解信阳毛尖茶品质的现状和含量范围,通过对信阳毛尖产地浉河、平桥、光山、罗山和新县等茶区的第1(春茶)、2(春茶)、3(夏茶)批次成品茶叶中品质成份进行研究。结果表明,平桥、罗山、新县茶区的茶氨酸含量较高,达到4.20%以上,其中平桥茶区含量最高(4.62%);光山、浉河茶区的含量较低,均低于4.0%,光山茶区的茶氨酸含量最低(3.71%)。水浸出物和茶多酚含量均以夏茶的最高,均显著(P≤0.05)高于春茶(第1批);而茶叶中氨基酸、茶多糖、茶氨酸含量均以春茶较高,显著(P≤0.05)或极显著(P≤0.01)高于夏茶。信阳毛尖茶春茶的品质含量(%)范围为:咖啡碱(3.70~4.77)、水浸出物(42.01~46.31)、氨基酸(2.66~3.67)、茶多糖(9.63~12.49)、茶氨酸(1.26~1.97)、茶多酚(15.60~18.46),夏茶的品质含量(%)范围为:咖啡碱(3.66~4.11)、水浸出物(45.62~46.26)、氨基酸(1.52~2.60)、茶多糖(7.80~9.35)、茶氨酸(0.70~1.40)、茶多酚(16.94~19.83)。The quality of the first( spring tea),second( spring tea),and third( summer tea) kind of Xin'yang-Maojian tea leaves were analyzed,which were taken from the five product regions at Shi'he,Pingqiao,Guangshan,Luoshan,and Xinxian county of Xinyang,Henan province of China. The results showed that Tea of Pingqiao,Luoshan,and Xinxian county had a higher amino acids content( 4. 20 %),and it was 4. 62 % at Pingqiao county and had the highest values than those at the other four places; however,amino acids content( 4. 20%) was lower at Guangshan and Shihe county,and it had the least values( 3. 71 %) at Guangshan county. Moreover,water extract( 45. 94%) and tea ployphenols( 18. 39 %) content of the third kinds were significantly( P≤0. 05) higher than the first kind; on the contrary,animo acid,soluble sugar,and L-Theanine content values of the first and second kinds were significantly( P≤0. 05) or extremely significantly( P≤0. 01) higher than those of the third. In addition,the common content values of coffee alkali,water extracts,amino acid,solubale sugar,L-Theanine,tea ployphenols in spring tea and summer tea were 3. 70-4. 77,42. 01-46. 31,2. 66-3. 67,9. 63-12. 49,1. 26-1. 97,15. 60-18. 46 and 3. 66-4. 11,45. 62-46. 26,1. 52-2. 60,7. 80-9. 35,0. 70-1. 40,16. 94-19. 83,respectively.
