四川省石棉县生猪胴体表面菌落总数的检测

摘　　要：应用国标法对石棉县畜禽定点屠宰场屠宰的60份生猪胴体体表样品进行菌落总数检测。结果表明,生猪胴体表面样品中菌落总数的超标率达31.7%。这说明石棉县畜禽定点屠宰场屠宰的卫生质量达标率相对较差,因此需要进一步改善屠宰生产和管理水平。Based on the criteria of national standards, 60 surface samples of pig carcass from fixed point livestock and poultry slaughterhouse were collected for detecting total number of bacterial colony. The results demonstrated that the over-standard rates of the total number of bacte- rial colony on the surface samples of pig carcass were 31.7% respectively. The results showed that the qualification rate of hygiene quality in this slaughterhouse was relatively lower, so it is necessary to further enhance the levels of slaughter production and management.
