摘 要:采用实验室合成的C22醇烷基磷酸酯(Favor LC)为乳化剂,对Favor LC的乳化性能和乳化稳定性、pH对乳化性能的影响以及影响乳化体系黏度的因素进行了研究。结果表明C22醇烷基磷酸酯乳化剂可以乳化多种不同极性的油脂,质量比3%的乳化剂可以乳化质量比高达50%的油脂,乳化体系稳定的最佳pH范围为6~7,pH、电解质和乳酸都会对体系黏度产生一定的影响,其中乳酸的降黏效果比较明显。偏光显微镜下可观察到明显的液晶结构,粒径分布图显示乳化体系的粒径分布均匀。The emulsifying properties of behenyl alcohol alkyl phosphate( Favor LC) which was synthesized in laboratory,the effect of pH on the emulsifying properties,and the factors which affect the viscosity of emulsion system were studied. Results showed that different polarity oils could be emulsified by Favor LC,3%( weight ratio) of emulsifier could emulsify oils in a weight ratio of up to 50%,and the optimum pH of emulsion system was between 6 and 7. The factors influencing viscosity of emulsion system included pH,electrolyte and lactic acid. The emulsion system of Favor LC formed liquid crystal structure with uniform particle size distribution.
