摘 要:以甘薯淀粉废渣为原料,采用混合酶进行淀粉水解,通过单因素试验和正交优化实验,探讨α-淀粉酶添加量、水解温度、水解时间、液固比、糖化添加量五个因素对淀粉水解率的影响,并对水解工艺条件进行优化。结果表明,淀粉水解最佳工艺条件:α-淀粉酶添加量为125U/g淀粉,糖化酶添加量为225U/g淀粉,水解时间75min,液固比为18,水解温度60℃,p H值6,在此条件下,淀粉水解率达到92.1%。表明该工艺可行。Separating starch from production waste of sweet potato starch and main process conditions were optimized by single- factor experiments combined with orthogonal optimization experiment. The starch hydrolysis rate was respect to alpha amylase additive amount, hydrolysis time, hydrolysis temperature, glucoamylase additive amount, liquid- solid ratio. The results showed that the optimal hydrolysis conditions were alpha amylase additive amount 125U/g, hydrolysis time 75min, hydrolysis temperature 60℃, glucoamylase additive amount 225U/g, liquid - solid ratio 18, pH6, Under the optimal hydrolysis conditions, the hydrolysis rate of starch was 92.1% , respectively.
