摘  要:为了揭示白肋烟贮藏过程中烟草特有亚硝胺(TSNAs)形成机理和筛选抑制TSNAs形成的物质,设置了白肋烟室内高温贮藏试验,选择臭氧作为氧化剂,维生素C(VC)、维生素E(VE)、咖啡酸为抗氧化剂处理白肋烟。结果表明,臭氧处理能够显著促进高温贮藏白肋烟TSNAs的形成,且促进效果随臭氧处理时间的增加显著增强。每天处理12 h的白肋烟TSNAs总量是不用臭氧处理的7.83倍,处理间TSNAs总量差异达极显著水平;在选取的几种抗氧化剂中,VC溶液抑制高温贮藏白肋烟TSNAs形成的效果最好。In order to reveal the mechanism of TSNAs formation in stored burley tobacco leaves and screen the substances which inhibit TSNAs formation, an experiment was designed to investigate the effects of oxidant and antioxidant treatments on TSNAs formation in burley tobacco leaves stored at high temperature. Ozone was used as an oxidant, vitamin C(VC),vitamin E(VE) and caffeic acid as antioxidants. The results showed that ozone treatment promoted the formation of TSNAs in burley tobacco leaves significantly, and the promoting effect significantly enhanced with the duration of ozone treatment. The total content of TSNAs in burley tobacco treated with ozone for 12 hours every day was 7.83 times that in leaves without ozone treatment. The difference of total TSNAs content reached extremely significant level between the treatments. Among the selected antioxidants, VC solution presented the most significant inhibitory effect on TSNAs formation.
