摘 要:以新疆特色馕制品为研究对象,建立馕制品丙烯酰胺固相萃取-高效液相的检测方法。以甲醇作为提取剂,采用固相萃取小柱(SPE)对样品液进行前处理,HPLC分析检测,色谱条件为:反相C18色谱柱,以甲醇和水溶液(v:v,5:95)作为流动相,流速为1 m L/min,进样量10μL,紫外检测波长200 nm。结果表明,该方法标准曲线线性关系良好,线性范围为1~7μg/m L,相关系数R2=0.9991,最低检出限为0.87μg/kg,平均回收率为78.46%,RSD为2.518%,测得新疆馕制品丙烯酰胺的含量为60.51~417.00μg/kg。该方法操作简便快捷,灵敏度高,适用于馕制品中丙烯酰胺的快速测定。This paper took characteristic Nang in Xinjiang as the subject of research and established a determination method of content of acrylamide of Nang in Xinjiang with SPE-HPLC. The extracting solvent was methanol, pretreatment used SPE, then analysed and detected with HPLC. The terms of chromatograph was reversed phase C18 column, eluted with mixture of methanol and water (v:v, 5:95) at 1.0 mL/min, sample volume was 10 IJL, ultraviolet detection wavelength was 200 nm. The results showed the calibration curves of acrylamide had good linearity. The developed method exhibited good linearity over the range from 1 IJg/mL to 7 pg/mL with a correlation coefficient of 0.9991 and the minimum detection limit was 0.87 μg/mL. The recovery of was 78.46%, RSD was 2.518%, acrylamide content of Nang products of Xinjiang was 60.51-417.00μg/kg. The advantage of the method was quick, sensitive, specific and suitable for the determination of acrylamide in Nang products.
