摘  要:以泸型大曲作为研究对象,对大曲曲表和曲心的理化生化指标进行了测定,并运用SPSS数学软件对检测数据进行t检验和主成分分析。结果显示,大曲曲表与曲心的酸度、氨态氮含量差异显著;对曲表质量影响最大的指标是淀粉转化率、酯化力,对曲心质量影响最大的指标是酯化力、酸度;将主成分综合得分结果进行比较,曲心质量得分显著高于曲表质量得分。由此说明,大曲曲表与曲心的理化生化特性及质量有一定的差异。Luxing Daqu was used to detect the physicochemical and biochemical indicators between surface and inside of Daqu. The data were analyzed with mean test and principal component analysis by SPSS. The results showed that acidity, content of ammonia nitrogen was significantly different between surface and inside. The results of principal component analysis showed that the largest influencing indexes of Daqu's surface were starch conversion rate and esterifying power. The largest influencing indexes of Daqu's inside were esterifying power and acidity. The results of comprehensive scores of principal components showed that the quality score of inside was significantly higher than that of surface, indicating that there were differences of quality, physicochemical and biochemical indicators between surface and inside of Daqu.
