摘  要:目的 了解平顶山市亚硝酸盐在散装熟肉制品中的使用状况,关注食品卫生安全,保障居民身体健康。方法在市区和几个县区各抽取3~5个监测点(市场),各监测点采集散装熟肉制品1份以上进行亚硝酸盐残留量测定。结果2011-2013年共采集、检测熟肉制品样品344份,检出亚硝酸盐残留量331份,检出率为96.2%;超标94份,超标率为27.3%。2011-2013年3年间残留量差异无统计学意义(t=1.106,P=0.270),超标率差异有统计学意义(χ2=16.44,P=0.000),城乡间超标率差异无统计学意义(χ2=0.406,P=0.524),猪肉、牛肉超标率差异有统计学意义(χ2=20.832,P=0.000),羊肉、牛肉超标率差异有统计学意义(χ2=12.423,P=0.000),牛肉超标情况显著高于猪肉及羊肉超标情况。结论 平顶山市散装熟肉制品亚硝酸盐污染超标情况较为严重,其中牛肉超标率最高,严重影响人民群众身体健康,应引起社会高度重视。Objective To know the application of nitrate in bulk cooked meat products of Pingdingshan city, pay attention to food health safety, guarantee the health of the residents. Methods Respectively select 3 -5 moni- toring points (markets) in urban district and counties, more than 1 bulk cooked meat products were checked in each monitoring points to check the residual quantity of nitrate. Results 344 samples was selected and checked in 3 years, residual quantity of nitrite detected in 331 samples, the detection rate was 96. 2% ; resid- ual quantity of nitrate over - standard in 94 samples, the detection rate was 27.3%, difference of over - standard rate in 3 years from 2011 to 2013 was statistically significant (t = 1. 106, P =0. 270), difference of over- standard rate was no obvious significance (X2 = 16.44, P = 0. 000), difference between urban district and counties was no obvious significance (X2 = 0. 406, P = 0. 524), difference of over - standard rate be- tween pork and beef was statistically significant (X2 = 20. 832, P = 0. 000), it is the same between mutton and beef (X2 = 12. 423, P =0. 000), the over - standard rate in beef is much higher than that in pork and mutton. Conclusions The over - standard rate in bulk cooked meat products is serious, among which beef is most serious, the situation has seriously affects the peopleg health, which should be highly valued socially.
