摘  要:2013年1月,新西兰牛乳及乳制品中双氰胺的检出,引起了全世界广泛的关注。因此,乳制品中双氰胺的检测方法成为了关注的热点问题。本文主要综述了乳及乳制品中双氰胺的高效液相色谱-串联质谱(high performance liquid chromatography-tandem mass spectrometry,HPLC-MS/MS)、超高效液相色谱-串联质谱(ultra performance liquid chromatography-tandem mass spectrometry,UPLC-MS/MS)及超快速液相色谱-串联质谱(ultra fast liquid chromatography tandem mass spectrometry,UFLC-MS/MS)的检测方法,包括样品的提取和净化、色谱柱的选择、液相条件的优化、质谱检测方式以及基质效应。In January 2013, it was reported that dicyandiamide (DCD) residues were detected in New Zealand milk and milk products, which has received worldwide concern. Therefore, the development of methods to detect dicyandiamide in milk and dairy products has become a hot topic. In this paper, we review methods used to detect dicyandiamide in milk and dairy products such as HPLC-MS/MS, UPLC-MS/MS and UFLC-MS/MS, including sample extraction and purification, chromatographic column selection, mobile phase composition optimization, mass spectrometry monitoring mode and matrix effect of samples.
