摘 要:通过在基础饲粮中添加不同比例的桑叶粉,考察桑叶粉对皖西白鹅生长性能、屠宰性能及肉质的影响。分别给125日龄的皖西白鹅连续50 d饲喂添加5%、8%、11%桑叶粉的配方饲粮,调查平均日采食量较不添食桑叶粉的对照组均略有增加,但平均日体质量增加量极显著降低(P<0.01),导致料重比极显著增加(P<0.01);桑叶粉添食皖西白鹅的屠宰率、半净膛率、全净膛率均高于对照组,其中屠宰率显著高于对照组(P<0.05);添食桑叶粉能极显著降低皖西白鹅的腹脂率(P<0.01),对胸肌率和腿肌率的影响不明显(P>0.05);添食桑叶粉可显著降低皖西白鹅肌肉中干物质、粗脂肪、粗蛋白、饱和脂肪酸和不饱和脂肪酸的含量(P<0.05),总氨基酸含量也略有降低;除了8%桑叶粉添加组外,其余2个桑叶粉添加组皖西白鹅肌肉中的肌苷酸含量均高于对照组,11%桑叶粉添加组皖西白鹅肌肉中的硫胺素含量比对照组提高52.00%(P<0.05)。试验结果初步表明,在饲粮中添加适量桑叶粉可以明显提高皖西白鹅的屠宰性能,增加肉质风味,但还应适当降低桑叶粉的添加量,以改善饲料的适口性。The effect of mulberry leaf powder on growth, slaughter performance and meat quality of Wan-xi white goose was investigated by adding mulberry leaf powder of different proportions in a basal goose diet. After Wan-xi white geese of 125-day-old were fed with diets supplemented with 5%, 8% and 11% mulberry leaf powder continuously for 50 days, the average daily feed intake of Wan-xi white geese increased slightly, while the average increment of daily body weight decreased significantly ( P〈0.01 ), and the ratio of feed to weight gain increased significantly (P〈0. 01 ) compared to the control group not supplemented with mulberry leaf powder. The slaughter rate, semi-eviscerated rate and eviscerated rate of Wan-xi white geese that were fed with mulberry leaf powder were higher than those in the control group, and the slaughter rate was significantly higher than the control group (P〈0.05). Adding mulberry leaf powder in diet can significantly reduce the abdominal fat rate of Wan-xi white goose (P〈0.01), however, adding of mul- berry leaf powder had no significant impact on pectoral muscle rate and limb muscle rate (P〉O. 05). Compared to the control group, the contents of dry matter, fat, crude pro- tein, saturated fatty acid and unsaturated fatty acid of Wan-xi white geese fed with mulberry leaf powder were decreased significantly (P〈O. 05), and the content of total amino acids was also decreased slightly. Except white goose fed with diets supplemented with 8% mulberry leaf powder, the inosinic acid content of white goose from the remaining two test groups was higher than that of white geese from the control group. The thiamine content of Wan-xi white geese fed with diets sup- plemented with 11% mulberry leaf powder increased by 52.00% compared with that of white geese from the control group (P〈0. 05).
