摘 要:以粮食和蔬菜为主的北京市进城农民工食物消费状况与城镇居民和农村居民存在明显差异,其食物消费结构也许并非是农村居民向城镇居民的简单过渡,而已然演化成区别于这两个群体的新的食物消费结构形态.通过LES模型研究发现,北京市进城农民工食物消费支出系统中,水产品和酒精并不构成食物消费的必需品;主要食物中,边际预算份额从高到低依次为蔬菜、肉禽、粮食、奶和瓜果;蔬菜、奶和瓜果的基本消费支出相互间比例为13.4:1.7:1;肉禽和奶富有弹性,蔬菜接近于水平弹性,而瓜果和粮食则缺乏弹性.From the comparative study with urban residents and rural residents, it is ob- served that rural-to-urban migrant workers' food consumption structure based on grain and vegetables is not a simple transition from rural residents' to urban residents', but evolved into a new pattern of food consumption structure. LES model is utilized to analyze food consump- tion expenditure system of migrant workers, finding that aquatic products and alcohol are not necessities in food consumption; the main five foods consumption ranks as vegetables, meat products, grain, milk and fruits by the marginal share of the budget; the expenditure ratio of basic consumption among vegetables, milk and fruits is 13.4:1.7:1; according to expenditure elasticity of consumption, meat products and milk are rich of flexibility, vegetables are close to 1 and fruits and grain are lack of flexibility.
