摘 要:目的 了解鄞州区4、5岁幼儿营养摄入状况,为开展4、5岁幼儿合理膳食提供依据。方法 采用分层整群随机抽样,抽取鄞州区中心区、郊区各1所幼托机构,采用三日膳食称重法和膳食记录法,调查了337名4、5岁幼儿的膳食摄入情况。结果 与中国居民膳食营养素参考摄入量相比,4、5岁幼儿热量、蛋白质、维生素C、钙、钾、锌摄入不足。膳食能量来源中谷类所占比例为52.7%,碳水化合物摄入偏低。脂肪来源中,动物类食物占74.2%,动物性脂肪摄入偏高。维生素C来源中水果仅占17.2%,摄入量偏低。蛋白质、钙的来源中,豆类仅占6.4%和7.1%,豆类摄入不足。结论 应对幼儿的日常膳食进行适当干预,以保证4~5岁幼儿的健康成长。Objective To understand the diet and nutritional status of 4 and 5 years old children in Yinzhou District, and provide basis for the dietary intervention. Methods Stratified cluster random sampling was conducted to select 1 pre-school each from urban and suburban district in Yingzhou. Dietary survey was performed in 337 children by three dietary weighing method and dietary record method. Results Compared with the Chinese DRIs, the dietary intakes of heat, protein, VC, calcium, potassium, zinc intake were inadequate for children. The proportion of cereals in the source of energy was 52.7%, and carbohydrate intake was low. The proportion of animal food in the source of fat was 74.2%, and the intake of animal fat was excess. The proportion of fruit in the sources of Vitamin C was only 17.2%, and the intake was inadequate. The proportion of beans in the sources of protein and calcium were accounting for 6.4% and 7.1%, respectively, and the intakes of beans were insufficient. Conclusion A proper intervention should be performed to ensure the healthy growth of 4 and 5 years old children.
