摘 要:研究不同材质容器对豆粕固态发酵的影响,探讨适合的发酵容器材质。试验在同样条件下将接种的豆粕分别装入相同容积的杉木、聚乙烯、不锈钢容器中进行固态发酵,比较发酵后豆粕的参数。结果表明:在不同材质容器中发酵的豆粕,中心和表面的小肽含量、表面的pH值和水分及中心温度都具有显著性差异(P<0.05)。发酵容器材质的透水性和导热性是发酵结果差异的主要因素,杉木比聚乙烯和不锈钢具有更好的透水性和保温性,是作为发酵容器最好的选择。We studied the effect of containers of different materials on the soybean solid state fermentation and explored the suitable material for fermentation containers. The experiments were dealt with the vaccination soybean meal by solid state fermentation in the same volume o{ containers of cedar plank, polyethylene and stainless steel under the same conditions, respec- tively. Tests were conducted to compare the parameters after the fermentation. For the soybean meal fermented in the contain ers of different materials, the content of small peptide in the ceter and surface, pH value and the moisture content and the center temperature all showed significant difference (P〈0.05). Water permeability and thermal conductivity of the containers were the main factors of different fermentation results. Cedar plank was the best choice for fermentation container, which was better for water permeability and heat preservation than polyethylene and stainless steel.
