太行隆肛蛙营养成分的分析

摘　　要：运用直接干燥法、微量凯氏定氮法、索氏抽提法、灼烧称量法、容量法和钼蓝比色法对产自河南省济源市的10只太行隆肛蛙(Feirana taihangnica)营养成分进行测定分析.结果表明:太行隆肛蛙的水分含量较高,蛋白质、脂肪和灰分含量较低,但含钙量异常丰富,每百克肌肉中含钙490 mg,远远高于其他肉制品和大部分水产品,含磷量也较高.因此,太行隆肛蛙可以作为重要的钙磷补充食物.The nutritive compositions in the muscle tissues of Feirana taihangnica collected from Jiyuan City,Henan Province,China,were analyzed by direct drying method,micro Kjeldahl determination,Soxhlet extraction,burning weighing,volumetric method and molybdenum blue colorimetry. The results showed that the muscle tissues of F. taihangnica had higher moisture content,lower contents of protein,fat and ash. The hectogram muscle calcium of F. taihangnica was 490 mg,which is far higher than other meat products and most aquatic products,as well as phosphorus content. Therefore,muscle tissues of F. taihangnica can be used as an important calcium and phosphorus supply for food.
