宜宾市翠屏区市售熟肉制品中亚硝酸盐污染状况的监测与分析

摘  要:目的:了解亚硝酸盐在市售散装熟肉制品中的污染状况,粗估亚硝酸盐的膳食暴露风险。方法:分析2005~2008年翠屏区市售散装熟肉制品中亚硝酸盐监测资料,结合膳食摄入数据,计算膳食暴露值。结果:4年问共监测市售散装熟肉制品1476件,亚硝酸盐检出率达62.27%,超标率26.90%,平均检出值58.2mg/kg;来自西郊和安卓的熟内中亚硝酸盐超标率较高;风险最大的是以腌腊、酱卤、熏烧烤加工的鸭肉和猪内类熟内。翠屏区居民每人日公斤体重从熟内制品中摄入亚硝酸盐量0.089mg/kg,高于允许撮入值。结论:翠屏区市售散装熟肉制品中添加亚硝酸盐普遍,残留量超标现象较严重,应针对高风险因素重点监测和防范,防止食源性疾病发生。Objective: to understand the nitrite pollution condition in bulk cooked meat products sold, rough estimates of nitrite dietary exposure risk. Conclusion: adding nitrite common bulk cooked meat products sold, excessive residue phenomenon is relatively serious, shall be in view of the high risk factors in the key monitoring and prevention, to prevent food - borne diseases.
