摘  要:对新疆和田骏枣、吕梁临县骏枣、吕梁交城骏枣中总糖、还原糖含量进行测定并对结果进行比较分析。结果表明:新疆和田骏枣、吕梁临县骏枣、吕梁交城骏枣中总糖含量分别为:58.06%、72.09%、27.56%;还原糖含量分别为:40.2%、62.5%、24.6%。统计分析结果显示不同地区红枣中总糖及还原糖含量均存在显著性差异,可以在一定程度上为红枣产地鉴定提供理论依据。Spectrophotometry was applied to the determination of total sugar and reducing sugar in red date from different areas. The level of total sugar and reducing sugar was compared with three areas of red date. The contents of total sugar in Hotan, Linxian, Jiaocheng were as follows :58.06% ,72.09% ,27.56% ; the contents of reducing sugar were as follows :40. 2% ,62.5% ,24.6%. By comparing, there is significant difference in the level of total sugar and reducing sugar between different areas.
