摘 要:冬枣由于口感极佳且富含多种维生素和矿物质元素而深受广大消费者的喜爱。但是,冬枣的保鲜期很短,在贮藏期间极易软化和腐烂,维生素等营养物质也会大量损失。因此,研究冬枣的保鲜技术有重要的现实意义,尤其在物流运输当中,冬枣的保鲜很大程度上决定着经济成本。冷库储存是一种比较好的保鲜手段。选择二代冬枣为研究对象,并分别在移动冷库1和2(控制条件不一样)以及普通机械冷藏条件下进行了对比试验。同时用相关指标对冬枣的保鲜程度进行评价,用评价指标数据对移动冷库储存保鲜技术的可行性和适用性进行了论证,并表明其在物流运输中的优越性。The Dongzao jujube is liked by the broad masses of consumers for its good tasts and abundance in various vitamins and mineral elements. However, the preservation period of Dongzao is so short, and it' s likely to soften and rot. At the same time, the vitamins and other nutrient substances would loss largely. So it has the important realistic purpose to study the preservation technology of Dongzao, especially in the logistics field, the preservation of Dongzao decides the economic costs to a great extent. The freezer preservation is one of best preservation methods. This paper chose the second generation Dongzao jujube as the research objects, and made three contrast experiments under conditions of moving freezer 1 and freezer 2 (with different control conditions) and normal mechanical freezer. And used relative indexes to evaluate the preservation degree. Also tested the feasibility and applicability of moving freezer preservation technology by using the data of evaluating indexes. This method also manifested its superiority in the logistics fields.
