摘  要:作为一种重要的粮食作物,大豆应用广泛并在人类和动物营养方面起着至关重要的作用,但大豆中也含有多种过敏原,能够诱发超敏反应,导致机体损伤。随着人们对食品过敏问题的日益重视,各种针对大豆过敏原的快速、准确的检测方法得到了发展,其中免疫学方法具有灵敏性高、特异性强的特点,能够对过敏原进行定性、定量检测而成为研究热点。本文综述了针对大豆过敏原的免疫学检测方法,并对今后的研究方向进行了初步探讨。As an important crop, soybean is widely used and plays a vital role in human and animal nutrition. However, soybean contains several allergens which can induce hypersensitive responses and thus lead to injury of body. Along with the increasing emphasis on food allergy problem, various kinds of rapid and accurate detection methods for soybean allergens have been developed. Among them, immunological method shall be proved to be the hotpot of current research since its advantages such as high sensitivity, strong specificity, and the ability to conduct the qualitative and quantitative detection. The paper has introduced the immunological detection method for soybean allergens and preliminary discussed the future research direction.
