摘 要:香榧种植已经成为浙江诸暨等地山区农民的主要经济来源,而云南榧子还未得到有效的开发利用。对云南榧子和香榧子的蛋白质、粗脂肪和矿质元素含量进行了测定和比较研究,采用凯式定氮法测定了两种榧子蛋白质含量,结果显示香榧子蛋白含量较云南榧子蛋白含量高;采用索氏提取法测定了两种榧子粗脂肪含量,结果显示云南榧子的粗脂肪含量低于香榧子;采用ICP-OES法测定了两种榧子20种矿质元素含量,结果显示两种榧子均富含矿质元素K、Mg、P、Ca、Na、Fe、Mn、Cu、S、Zn、Se,均为典型的高钾低钠食品。Torreya grandis plant had become main economic sources for mountain farmers such as zhuji in Zhejiang province, whereas seeds of Torreya yunnanensis had not been effectively used. Protein, crude fat and mineral elements content in seeds of T.yunnanensis and T. grandis were determined and compared in this study. Kjeldahl method was used to determine the protein content , and results showed that protein content in seeds of T. grandis was higher than that in T.yunnanensis. Soxhlet extraction method was used to determine the crude fat content, and results showed that crude fat content in seeds of T.yunnanensis was less than that in T. grandis. Twenty mineral elements of seeds were determined by ICP-OES. Results showed that seeds of T.yunnanensis and T. grandis were both rich in mineral elements K, Mg, P, Ca, Na, Fe, Mn, Cu, S, Zn and Se. They were typical high potassium and low sodium dried fruits.
