摘  要:目的为解决滴定方法测定总糖含量存在的过程繁琐、效率低下(或费时费力)等问题,本文建立了一种基于流动注射分析仪的简便高效、高准确度和高精密度的糕点类食品总糖含量测定新方法。方法该流动注射分析法通过仪器配备的自动进样器、在线水解仪和紫外检测器等子模块自动完成总糖的含量测定。结果该方法总糖检测标准曲线:y=0.181 9x-0.113 3(r=0.999 8),线性范围为0.8 mg/L^800 mg/L,检出限为0.002 5 g/L,加标回收率为97.52%~106.50%,方法重复性精密度(RSD)为1.4%,该方法和滴定方法测定总糖含量结果差异无统计学意义(P>0.05)。结论采用流动注射分析法对批量糕点进行总糖含量测试分析,结果稳定、操作简便,可大大提高检测效率,值得推广应用。Objective For solving the problem of cumbersome process,and time- consuming in the determination of total sugar content with titration method,this paper is to establish a convenient and efficient,high accurate and high precise method for the determination of total sugar content,based on flow injection analyzer. Methods The flow injection analysis method,through equipping with automatic injector,online hydrolysis device and UV detector sub modules,could automatically complete the content of total sugar determination. Results The standard curve of this method was y = 0. 181 9x- 0. 113 3 with a good standard detection range of 0. 8 mg / L- 800 mg / L( r = 0. 999 8),the detection limit of 0. 002 5 g / L,the recovery rate of 97. 52%-106. 50%,and the repeatability precision rate of 1. 40%. There was no significant difference on the determination results of total sugar content between the method and the titration method( P〉0. 05). Conclusion Using FIA to analyze the total sugar content of a batch of cakes,the result is stable and easy to operate. It can greatly improve the detection efficiency and is worthy to be popularized.
