摘　　要：花青苷是自然界分布的一种植物多酚。近年来的研究发现,黑米花青苷具有抗氧化、抗炎、降血脂以及抑制肿瘤生成等生理功能。本课题研究了近年来关于黑米花青苷抗氧化活性研究的文献,对其进行收集、整理、归纳、总结。从而为黑米花青苷抗氧化活性进一步的研究提供借鉴和理论依据。Cyanine glycosides is a kind of plant polyphenols in the nature. In recent years, studies have found that the black rice eyanine glycosides has some physiological function, such as anti - oxidant, anti - inflamma- tory, reducing blood fat, inhibiting the generation of tumor and so on. This thesis works on the research litera- ture of antioxidant activity of black rice anthocyanidin recent years, carries on the collection, sorting, induc- tion, abstract. Thus, supplying reference and theoretical basis for the further research in antioxidant activity of black rice anthoeyanidin.
