摘　　要：香菇中含有大量碳水化合物、膳食纤维、蛋白质、维生素,是一种理想的营养食物。由于其含有的活性成分可对人体健康产生有益影响,又被视为功能性食物。多糖是香菇中重要的活性物质,具有增强免疫力和抗肿瘤活性。总结香菇多糖免疫调节和抗肿瘤活性的研究进展,为其作为保健食品、药品进行开发利用提供科学依据。Lentinus edodes have been valued as a credible source of nutrients including considerable amounts of carbohydrate, dietary fiber,proteins and vitamins,and they are also recognized as functional foods for their bioactive compounds offer huge beneficial im- pacts on human health. Polysaccharides have been known to be most potent anti-tumor and immunomodulating substance in Lentinus edodes. This review aims to integrate the progress on immune modulation and anti-tumor activities of Lentinan, which may provide scientific reference for its future study and applications.
