摘  要:大米蛋白有许多功能特性,比如影响胆固醇代谢,调节三羧酸循环以及影响体重和肥胖等.但是现在还不知道大米蛋白为何会发挥如此功能特性.机体真正的消化是从胃开始的,在直肠结束的.蛋白质在胃中分解成小肽,然后进入小肠分解成氨基酸被人体吸收,最后不可消化的蛋白质会排出体外.本文介绍了生长期小鼠在无油脂添加和富含油质添加的膳食条件下大米蛋白消化性能,我们以大米蛋白和酪蛋白为蛋白源,自由摄食后,用SDS—PAGE和Lowry法检测小鼠的胃,小肠上部,小肠下部,盲肠和直肠。Rice protein is verified to have many functions such as to affect cholesterol metabolism, modify triglyceride metabolism and lead to an improvement of body weight and adiposity, though no one knows how rice protein can play an important role, we can only be sure that the function of rice protein must be concerned with its digestibility. The real digestion is beginning from the stomach and finishing by the rectum. Proteins decompose into small peptide in the stomach and then turn into amino acid to be absorbed easily in the small intestine, and then undigestible proteins will be eliminated from the body through cecum and rectum. This paper is learning the rice protein digestibility of growing rats on oil - free diet and oil - rich diet. To evaluate the importance of rice protein digestibility, we feed rats with rice protein and casein to see how is protein depositions changed by collecting rats' whole digestive organs. We collected rats' stomach, upper intestine, lower intestine, cecum and rectum contents, and then use SDS- PAGE and Lowry methods to analyze protein changes.
