摘 要:对植物表皮蜡质的形态结构、化学成分及其在果蔬贮藏中的作用进行了概述.植物表皮蜡质是植物与外部环境的界面,对植物具有重要的生物学意义.植物表皮蜡质可通过减少水分非气孔性散失作用维持果蔬的水分平衡,也可通过物理阻止和抗菌成分抵抗微生物的侵染,还具有减少果蔬冷害和软化等作用.因此,植物表皮蜡质对果蔬贮藏起到非常重要的作用.The research progress of morphological structure and chemical composition of the plant cuticular wax were mainly introduced , and its roles during the storage of fruits and vegetables were summarized.The plant cuticular wax was the main interface between plants and their environment , and had important biological significance for plants.The plant cuticular wax could maintain water balance of fruits and vegetables by limit-ing non-stomatal water loss , in addition , it could resist infection of pathogenic microorganism by physical bar-rier and anti-bacterial constituents.The plant cuticular wax also could reduce chilling injury and softening of fruits and vegetables.Thus, the plant cuticular wax played important roles in the storage of fruits and vegeta-bles.
