摘  要:居民在日常生活中消费各种膳食的同时,也消耗了水资源。不同的膳食结构及消费量,其水资源消耗量也不同。通过对我国城乡居民膳食消费水足迹的量化,比较城乡居民膳食水足迹量值及其组成的差异,探讨其时间和空间的变化特征,可为膳食结构调整,节约水资源提供依据。研究结果表明,2000--2011年我国城镇居民膳食水足迹增长较快,城镇居民肉类水足迹较农村居民高,而农村居民粮食水足迹高于城镇居民。各省份之间城镇居民膳食水足迹差异明显,而农村居民膳食水足迹之间的差异小于城镇居民。Daily dietary consumption is closely linked to water resources conservation, and the different dietary patterns have different water resources consumption. It can provide a basis for adjusting dietary pattern and saving water resources to probe into the dietary water footprint. According to the dietary consumption of urban and rural residents in China from 2000 to 2011, the dietary water footprints were calculated, and the difference of the value of their water footprints and their structure were compared, and the spatial-temporal distribution characteristics were analyzed. The results showed that the dietary water footprints of urban residents increased more quickly than that of rural residents, and the meat water footprint of urban residents was higher than that of rural residents, while the grain water footprint of rural residents was higher than that of urban residents. The difference of dietary water footprint for urban residents between provinces was obvious, however, the difference of dietary water footprint for rural residents between provinces was less than that of rural residents.
