摘  要:目的了解肉鸡孵化、养殖、屠宰、配送及销售等环节的沙门菌污染状况,对与肉鸡沙门菌污染有关的季节等危险因素进行分析,为预防和控制由沙门菌引起的食源性疾病提供基础数据和科学依据。方法 2012年7月至2013年6月,采集肉鸡孵化场、养殖场、屠宰场、配送及销售场所等4个肉鸡生产环节的产品样本和环境样本,按照GB 4789.4-2010和《2012年全国食源性致病菌监测工作手册》进行沙门菌分离及鉴定分型。结果检测16种1 123份样品,共检出沙门菌142株,总检出率为12.64%。检出的阳性菌株分布于沙门菌7个血清型,以印第安纳沙门菌为主(占57.04%);产品样本检出率较环境样本高;四个季度中,以第三季度沙门菌检出率最高(17.81%)(P<0.01);四个环节中,以屠宰环节沙门菌检出率最高(15.74%)(P<0.05)。结论潍坊市肉鸡生产存在沙门菌污染,沙门菌血清型主要是印第安纳沙门菌,沙门菌污染与季节有一定关系,以第三季度最为明显。Objective To understand the condition of Salmonellacontamination in broiler hatching,breeding,slaughter,processing and distribution,analyze risk factors associated with Salmonellacontamination of broilers,so as to provide the basic data and scientific basis for the prevention and control of food-borne diseases caused by Salmonella. MethodsDuring July,2012-June,2013,four broiler production chains of product and environmental samples were collected including broiler hatchery,farms,slaughterhouses,distribution and sales places.Isolation and identification of Salmonella typing were tested according to GB 4789.4-2010 and 2012 national food-borne pathogen monitoring manual. Results One hundred and fourty two strains of Salmonella were detected form 16 kinds of 1 123 samples,and the positive rate was12.64%.The detected bacteria included 7serotypes,mainly Indiana Salmonella(57.04%).The detection rate of Salmonellainproduct samples was higher than that in environmental samples.Thedetection rate was the highest in the third quarter of the year and slaughtering process with detection rate 17.81%(P 0.01)and 15.74%(P 0.05). Conclusion Salmonellacontamination exists in broiler production chain in Weifang city.Indiana Salmonellais the main Salmonellaserotype.And Salmonellacontamination has relationship with season,the most obvious in the third quarter.
