衡阳烟叶品质特征感官评价

摘　　要：为明确衡阳烟叶感官品质区域特征,以衡阳市2011～2013年的烟叶样品为材料,对其烟叶感官品质进行了分析.结果表明：（1）衡阳烟叶香气质尚好,香气量尚足,尚透发;烟气尚细腻、柔和、圆润;稍有刺激性和干燥感,余味尚净且舒适;微有生青气、枯焦气、木质气;（2）上部烟叶的香气质好于中部烟叶、香气量大于中部烟叶,上部烟叶较中部烟叶透发,上部烟叶较中部烟叶余味要舒适和干净;（3）衡阳烟叶不同年份差异显著,不同产区感官品质稳定和差异小;（4）衡阳烟叶感官品质弱于津巴布韦烟叶,但与湖南浓香型其他产区平均值接近.In order to ascertain the regional characteristics of sensory quality of flue -cured tobacco from Hengyang city, the tobacco sensory quality were analyzed by sensory evaluating the tobacco samples from Hengyang city in 2011 -2013.The results were as follows:1)The tobacco from Hengyang city were provided with good quality of aroma,enough quantity of aroma,a little diffusiveness,a little smoothness,a little softness,a little mellowness,little irritancy,little dry-ness,a little purity and easiness after taste,tiny scorched odour,tiny ligneous odour,tiny raw green odour and tiny green o-dour.2)The quality of aroma of upper tobacco leaves was better than middle tobacco leaves,quantity of aroma of upper to-bacco leaves was enougher than middle tobacco leaves,diffusiveness of upper tobacco leaves were better than middle tobac-co leaves,after taste of upper tobacco leaves were better than middle tobacco leaves.3)The sensory quality of flue -cured tobacco from Hengyang were not steady and little difference in different years,and that steady and little difference in differ-ent towns.4)The sensory quality of flue -cured tobacco from Hengyang are inferior to Zimbabwe,but that are very close to mean value of other strong flavor type tobacco -growing areas in Hunan province.
