摘  要:以花生、薏米为主要原料研制具有保健功能的饮料。利用混料设计方法对饮料的配方进行了研究,并测定了饮料中蛋白质和黄酮的含量。实验结果表明,花生薏米保健饮料的最佳配方为花生乳25%、薏米汁21%、白砂糖9%、水45%,复合稳定剂用量为0.2%,复合乳化剂用量为0.25%,蛋白质含量为0.64%,黄酮含量为1.06 mg/100 m L。A health drink was developed by using peanut and adlay as main material. The formula of the drink was studied, the contents of protein and flavonoids in the drink were determined. The breviscapin test results showed that the optimum formula of the drink was 25% extract of peanut, 21% extract of adlay, 9% white sugar and 45% water. The amount of the compound stabilizer is 0.2% and the amount of the compound emulsifier is 0.25%. The content of protein in the drink was 0.64% and the content of flavonoids was 1.06 mg/100 mL.
