中国古代的“方便面”——“棋子”考说

摘　　要：宋元以来，文献多有“棋子”一词，学者们亦有不同的解释。文章结合陕西关中等方言与民俗生活进行考证申说，认为“棋子”含义有二：一即棋子面，是一种如棋子的片状面食，先蒸熟后泡食，或直接煮食；二即棋子豆，是一种如棋子的块状面食，烙烤而食，可作干粮。可谓中国古代的“方便面”。Since the Song and Yuan dynasties , we could often see the word ＂Qi zi＂ in the literature. Scholars have different explanations about this word. This paper combines the dialect and folk life of Guanzhong area in shaanxi province to conduct research. The conclusion is that there are two meanings about the word ＂Qi zi＂. The first meaning is called ＂Qi zi noodles＂. This is a kind of sheet noodle looking like chess and we can steep this noodle in the soup after Steaming it or cook it directly. The second meaning is called ＂ Qi zi pea＂. This is a kind of lumpy noodle looking like chess and can be bake and roast. Sometimes we use this bean as solid food. So ＂Qi zi＂ can be described as the ＂ instant noodles ＂ of ancient China.
