摘  要:以玉米醇溶蛋白(Zein)和酪蛋白(Casein)为原料,利用谷氨酰胺转胺酶(TGase)为交联剂静电纺制备了酶交联Zein/Casein复合纳米纤维。表征了酶交联前后样品相对分子质量的变化,讨论了不同质量比样品的形貌和直径分布,水稳定性,润湿及力学性能。通过凝胶渗透色谱仪(GPC)的分析结果可知,交联导致样品相对分子质量明显增加。扫描电镜(SEM)分析结果表明,Zein/Casein质量比越大,样品的形态越好。同时说明交联后样品的水稳定性得到提高。电子万能试验机(WDW)测试结果表明,交联后样品的力学性能明显提高。表面张力仪(ST)结果显示,Zein/Casein质量比越小,样品的亲水性下降越明显。Zein/Casein composite nanofibers crosslinked by transglutaminase using Zein and Casein as raw materials were fabricated by electrospinning.The changes of relative molecular mass of samples before and after crosslinking were characterized,and the morphologies,diameter distributions,water stability,wettability and mechanical property of the samples with different mass ratios were discussed.The results from GPC revealed that crosslinking led to the remarkable increase of the relative molecular mass of samples.The SEM results indicated that the greater mass ratios the Zein/Casein had,the better morphology the samples possessed.The water stability of samples improved obviously at the same time.The results from WDW elucidated that the mechanical properties of samples improved obviously after crosslinking.The ST results revealed that the hydrophilia of samples decreased evidently with the reduction of the mass ratios of Zein/Casein.
