江西赣南客家两种保健野菜营养成分分析

摘　　要：采用公认的标准方法对益母草与土人参两种野菜的氨基酸和矿质元素进行了测定与分析。结果表明,两种野菜营养成分丰富,至少含16种氨基酸,其中7种人体必需氨基酸、9种药用氨基酸。赖氨酸、脯氨酸、钾、钙、磷、镁含量较高,铁、锰、锌等必需微量元素也较丰富。两种野菜有较高的营养价值和保健价值,可为人们合理选择保健食品提供科学依据。The mineral elements of Leonurus Artemisia and the contents of amino acids in two kinds of wild vegetables collected in Gannan area were determined by using recognized standard method. The results showed that they were rich in nutrition, and at least 16 kinds of amino acid,among which there were 7 kinds of essential amino acids and 9 kinds of amino acids for medical pur- poses. The content of Lys and Pro was richer, the contents of mineral elements K, Ca, P and Mg were higher together with abundant essential micro elements such as Fe, Mn, Zn, etc. They have higher nutritional value and therapeutic health care roles. It will pro- vide a scientific basis for selecting reasonable health food.
