摘  要:目的调查绿茶中铅、铬的本底水平,研究绿茶中违法添加铅铬绿染色的判定依据。方法采用国家标准方法对茶叶样品进行铅、铬测定,通过对自制的不同剂量绿茶染色样品的感官评价和铅、铬含量分析及对市售茶叶中铅、铬的含量水平调查,推断出绿茶中非法添加铅铬绿染色的最低获利水平和判定依据。结果当自制的阳性样品铅铬绿染色剂量达到0.1%时可起到改善绿茶色泽的效果,此时样品中铬含量高于国家限量标准近4倍,铅含量更是超出国家限量标准近20倍,铅、铬含量比也和铅铬绿染料相近,比值为5~7,同时茶水中铅含量也异常增高。结论得到判定绿茶中是否违法添加铅铬绿染色的实验室检测依据:茶叶中铅含量和铬含量同时超出限量标准,且铅、铬含量比值为5~7,茶水中铅含量异常增高。Objective A background survey of lead and chrome in tea was completed meanwhile a judging basis was established that whether lead chrome green was illegal added or not in green tea. Methods Lead and chromium in tea samples were deter- mined by national standard method. The lowest level profit and the judging basis of illegal adulteration were based on the content of lead and chrome in green tea that detected by national standard method, the sensory evaluation and the content analysis in homemade different doses of lead chrome green tea spiked samples and the background survey in green tea that marketing sales. Results The color and luster of green tea can be improved by spiked 0.1% content of lead and chrome green, but the concen- tration of chrome was 4 times and the lead was 20 times higher than the standard limitation besides the contents ratio of lead and chrome was 5 to 7. It was similar with the lead chrome green in this condition. Meanwhile, the concentration of lead in green tea water increased unusually. Conclusion The judging basis of illegal adulteration of lead chrome green in green tea is recom- mended as following: the concentration of lead and chrome in tea were both exceed and the concentration ratio between lead and chrome was 5 to 7. Meanwhile, the concentration of lead in green tea water increased unusually.
