摘 要:植物叶蛋白是世界上最大的可再生蛋白质资源之一,其提取物或加工产品将会在食品、饲料、医药、农药、化妆品等领域广泛应用。可用于提取叶蛋白的植物种类很多,资源丰富,可变废为宝。原料不同,蛋白提取率不同,需要综合考虑各种因素,针对不同原料选取不同方法,优化工艺条件。叶蛋白提取方法有多种,每种方法各有利弊,其原理、产物各不相同。叶蛋白及其产品研究在我国刚刚起步,工业化生产尚未形成,相应标准尚未制定,其相关研究将是今后的研究热点。Leaf protein is one of the world's largest renewable protein resources. The extract and the related products can be widely applied in food, feed, medicine, pesticide production, cosmetics and other fields. A variety of plants and resources can be used for ex- tracting leaf protein, which can recycle plant resources. There are many kinds of plant species with rich resources which can be used for leaf protein extraction, thus realize their high-value processing. The extraction rate differs by differnt materials. The extracting methods should be optimized according to the material and other factors. There are many methods for leaf protein extraction. The principle of each method is different and each method has its own advantages and disadvantages. The research and development work on leaf protein has just started in China, and the industrial production has not formed, the corresponding standards has not been set. Therefore, the related investigation will become hot spot in the near future.
