摘 要:运用多光谱技术研究纳他霉素/乳酸链球菌素(natamycin/nisin)与牛血清白蛋白(BSA)间的相互作用.结果表明:natamycin和nisin与BSA间的猝灭机理分别为静态猝灭和联合猝灭.natamycin/nisin绑定BSA位点I从而导致BSA结构变化.此外,计算了这两个绑定反应的结合常数、结合位点数和结合距离.The interaction of natamycin/nisin with bovine serum albumin (BSA) has been investigated by multiple spectroscopic techniques. The results indicated that the quenching mechanism between BSA and natamycin or nisin was a static quenching or combined quenching ( static and dynamic) process. Natamycin/nisin was primarily bound to site I (subdomain IIA) of BSA, which led to its structural changes. In addition, the binding constants, binding site numbers and binding distance of the two systems were also calculated.
