摘 要:[目的]考察烟叶发酵对晒烟质量的影响。[方法]以"什烟一号"为材料,对比分析发酵前后烟叶的化学成分,研究发酵技术在"什烟一号"上的应用效果。[结果]分析显示,发酵对于烟叶的化学成分影响较大,发酵之后烟叶中水溶性总糖、还原糖、总氮、总植物碱、氯和钾的含量均呈现下降趋势,最终都趋于平缓。发酵后烟叶的化学成分趋于协调,烟叶品质有所提高,更加符合烟叶的工业可用性。[结论]研究可为发酵技术应用在晾晒烟的广泛生产上的应用提供理论和实践基础。[ Objective ] To investigate effects of fermentation process on sun-cured tobacco quality. [ Method] With Shiyan No. 1 as material ,the chemical components of tobacco before and alter fermentation were compared and analyzed. The application effects of fermentation technology in Shiyan No. 1 were studied. [Result] The chemical composition of tobacco leaves was affected significantly by fermentation. After fermentation,water soluble total sugar,reducing sugar,total nitrogen,total alkaloids, chloride, and potassium content showed a downward trend, and eventually leveled off, the quality of the tobacco leaves increased,and the quality of tobacco leaf was more consistent with the industrial availability of tobacco. [ Conclusion] The study can provide theoretical and practical basis for fermentation in wide range production of sun-cured tobacco.
