摘  要:为调查蔬菜生产和加工企业如何有效地控制蔬菜的质量安全,以定性调查的方法研究对京供菜的8家蔬菜基地。调查结果表明,目前国内蔬菜种植公司对蔬菜质量安全越来越重视,加强了相关的实施手段,半数调查企业实施了GMP和HACCP来控制蔬菜质量安全;但是仍有部分蔬菜种植基地需要更进一步发展,建立HACCP体系。控制蔬菜质量安全问题的关键是实施有效的产品追溯体系,实行从"农田到餐桌"的基于蔬菜供应链的管理。This study aimed to investigate the effective control methods on vegetable safety and quality ofvegetable suppliers. A qualitative study with in-depth interviews with 8 vegetable suppliers was conducted.The results indicated that half of the suppliers in this study used FSMS(Food Safety Management System)including HACCP and GMP to control vegetable safety and quality. However, there were still a few companieswho needed to improve their control methods by establishing HACCP system and enforcing standards. Carryingout effective traceability system and taking management control from farmland to dining table is very importantto improve safety and quality of fresh vegetables.
