摘  要:利用碱性蛋白酶水解制得的乳清蛋白肽(WPP),以青年小鼠、自然衰老的小鼠和灌胃脑复康的自然衰老的小鼠作对照,以灌胃低中高剂量乳清蛋白肽即100,200和400 mg/(kg·d)自然衰老的小鼠为实验组,通过体内抗氧化指标(SOD、MDA、GSH-Px、蛋白质羰基)和脑内乙酰胆碱脂酶来研究乳清蛋白肽对自然衰老的小鼠抗氧化效果及乙酰胆碱脂酶活力的影响,并探究WPP对老龄小鼠学习记忆的影响。灌胃乳清蛋白肽自然衰老小鼠的SOD和GSH-Px活性显著增加,MDA和蛋白质羰基浓度显著降低,同时乙酰胆碱脂酶的活性也有所降低,高剂量组与脑复康对照组结果相近;实验结果表明乳清蛋白肽能显著提高自然衰老小鼠抗氧化能力,并能调节脑组织乙酰胆碱酯酶的活性,提高衰老小鼠学习记忆认知功能。Whey protein peptides were prepared by alkaline protease hydrolysis.Compared with the young mice, natural aged mice and mice treated by piracetam tabletsas as control groups, the mice were given three different doses of WPP, 100, 200, 400 mg/(kg-d) respectively as experimental groups. Whey protein peptides were quantified as the vivo antioxidant index (SOD, MDA, GSH-Px and protein carbonyl) and AChE of brain tissue to observe the affect of Antioxidant and the in aged mice, and learning and memory ability. The results showed that af- ter gavage whey protein peptides, SOD and GSH-Px activity in aged mice were significantly increased, MDA and protein carbonyl content were significantly decreased; AChE activity was also decreased. High-dose group has similar results with the piracetam tablets control group. Whey protein peptide can significantly improve antioxidant ability of natural aged mice, and adjust activity of AChE of brain tissue, therefore improve the ability of learning and cognitive function.
