摘　　要：《功能食品实训技术》是食品营养与检测专业一门重要的专业课程。作者从企业真实工作任务出发,参照食品检验工职业资格标准以及行业要求,以工学结合为导向,围绕功能食品分离纯化岗位的工作任务所需的知识、技能,把学生职业素养融入其中,详尽阐述了该课程改革的思路、教学资源库、"教学做"实训室、教学内容、教学方法、考核方法和课程特色等方面的改革与实践。“Functional food technology”is the food nutrition and an important testing professional courses. On departurefrom the enterprise＇s tasks,reference food chemical analysis tools professional qualification standards and industryrequirements,combined with engineering-oriented positions around the separation and purification of tasks necessaryknowledge,skills and professionalism of the students into which elaborated the thinking of curriculum reform,teachingresource library,“Teaching,”to reform and practice training room,teaching content,teaching methods,assessmentmethods and curriculumand other aspects of the characteristics.
