摘 要:采后贮运科学与技术的快速发展推动了果蔬采后品质的提升,减少了流通损失,但在实践中,更为直接的采后贮运参与者,如物流人员、生鲜电商和批发零售商等,因为缺乏果蔬采后生理的理论知识,对于果蔬的各种贮运技术实施不当或错误实施,限制了采后贮运科技的应用与发展。本文综述了影响果蔬贮运的五个关键生理因素,包括采前因素、采后呼吸生理、采后水分生理、采后非侵染性病害和采后侵染性病害五个方面,旨在为果蔬采后贮运从业者采用先进贮运技术提供理论和技术依据,为采后贮运科技的技术"落地"提供理论支持。In laboratory, the rapidly developed postharvest storage and transportation(ST) science and technology promoted the postharvest quality improvement and postharvest loss reduction. However, many effective and new ST technologies in markets didn't show the same effectiveness compared with in lab. The reason has been found that those who directly manage or handle the logistics enterprises, wholesale markets and retailed shops are unacquaintance with postharvest physiology knowledge, as a result, many effective and new ST technologies hadn't been used in suitable ways, even in wrong ways. Therefore, in this paper,the pre-harvest physiology, respiration physiology, water physiology, noninfectious disease, infectious diseases in fruit and vegetable which closely related to the workers in their practices have been reviewed. This paper could provide managers or workers in logistics enterprises, wholesale markets and retailed shops with easily obtaining and practical physiology knowledge and also theoretical support for the industrialization of ST technologies.
